We decided to make our
favorite mexican meal tonight,
Chicken Tortilla Bake. It is a little labor intensive, but
SO worth it. You start with chicken, tortillas, onion, tomato sauce, stewed tomatoes, garlic powder, chili powder, basil ,enchilada sauce and cheese.
OH MY!You saute the onion in butter until slightly transparent.
Then add your sauces and spices. Let simmer for 5 to 10 minutes. While this is going on you fry your tortillas in oil for about a minute each. Then drag them through the sauce, fill with chicken and cheese and roll. Put in a 9x13 dish and cover with the rest of the sauce and more cheese.
YUM! Bake for 30-40 minutes.
